Day Two

The second day. Always the worse.

I woke up with ringing ears and that bright, burning ache which usually signals the start of an ear infection, plus a vague, all over ache. Ahhhhhhh, the wonderful switch from burning sugar energy to fat energy. I can almost hear all my internal gears grinding to a halt and switching over. Oh well, it only lasts a few days. Tomorrow will be better.

Spent most of the day in a slight fog, trying to roust myself off the couch to do....something...anything (besides crawl back in bed). Kiddo hadn't slept well the night before but you'd never know, she was everywhere and laughing like a loon. How does she have so much energy??

Watching her I ran up into a dilemma. I know sugar and heavily processed grains are bad (why else am I getting rid of it from MY diet?) but what do I do with kiddo? She only has 6 teeth and has trouble chewing meat (even crock pot stuff) and is iffy on veggies. Her usual diet has oatmeal, potatoes, carrots, dry cereals, and some bread....how do I replace those but still have food she can eat?

Hubby and I talked it over and thought up some ways around things (dicing meat into a fine meal for example...though not sure how she's going to like it since then it will be harder to pick up) and steaming veggies. How to replace cheerios though? That godsend when she suddenly decides she MUST EAT NOW and I have to prepare the meal first. A handful of cheerios and she is happy stacking, munching and throwing them at the dog and I get 5-15 minutes to throw a meal together. I wonder if dried veggies, sliced really really thin, would have the same crunch and dissolving ability as cheerios. Hmmmmmmm will have to think more on that one.

Otherwise the day went good. Hubby came home and cooked dinner (yeah!). By evening I was still exhausted and dragging but Day 2 is over.

Breakfast
Chicken sandwich with spicy mayo on an Oopsie roll.

Lunch
Grilled chicken thigh with raw baby carrots

Dinner
Chicken stuffed with provolone and prosciutto, roasted asparagus in olive oil and garlic

Liquids
Finished the Diet Cokes. Sigh...good-bye my red and silver friends!

Exercise
Lifted 3 pound hand weights for 5 minutes
6 twenty-foot wind sprints carrying 20 pound weight (translation: ran up and down the hallway-living-room-kitchen corridor carrying kiddo)

Mood
TIRED! Don't have the strength to snarl at anyone but if I did I'd be cranky. Looking forward to Day 5 when usually the energy comes back (or at least, always has the last few times I've done low-carb).
